Neman: St. Louisan brings African food to PBS cooking competition show
Adjo Honsou, locally known for her Fufu n' Sauce food truck, will be on "The Great American Recipe" beginning June 17. St. Louisan woman, who promotes a better understanding of African culture through volunteer work with the International Institute and through her food, Fufu, has been featured on PBS cooking competition show, Neman: Neman. She does not want children from Africa or any other region to have to experience what she did as a teen. The production of the show was larger than she imagined and involved a lot of trust in the team. She also mentioned that the rest of the filming was not enjoyable due to the need for more time-consuming work and frequent reshootings.

She does not want children from Africa or any other region to have to go through what she went through as a teen, she says. She tries to promote a better understanding of African culture through volunteer work with the International Institute and also through her food.
Fufu is a filler with little flavor of its own, so it takes on the flavors of the sauces and stews that accompany it, she says. It is made throughout Africa, and each region or country has its own way of making it. The yams and plantains that she uses are traditional in Togo. Other countries use cassava roots.
As always with these programs, she has agreed not to give details about how she did or even what dishes she cooked. But she did say that the production was much larger than she had ever imagined.
Everyone involved in the production knows what he or she is doing, but sometimes nothing else about the rest of the process. You have to trust that everyone else is capable and competent, she says.
She was intrigued to see how all the parts of the show fit together, especially the parts that aren’t shown on the screen. Everything worked as it was supposed to, because everyone could trust the others to do their part.
The rest of the filming was not as much fun. A vast amount of time was spent waiting, which she did not enjoy. And the parts of the show that were not devoted to the actual cooking were subject to reshoot after reshoot after reshoot.
